Monocaffeoyl(-)-tartaric acid is an extremely weak basic (essentially neutral) compound (based on its pKa). Monocaffeoyl(-)-tartaric acid has been detected, but not quantified in, green vegetables. This could make monocaffeoyl(-)-tartaric acid a potential biomarker for the consumption of these foods.
