Phenylacetaldehydes are compounds containing a phenylacetaldehyde moiety, which consists of a phenyl group substituted at the second position by an acetalydehyde. 4-Methyl-2-phenyl-2-pentenal is a sweet, cocoa, and nutty tasting compound. 4-Methyl-2-phenyl-2-pentenal has been detected, but not quantified in, several different foods, such as crustaceans, nuts, teas (Camellia sinensis), red tea, and green tea. This could make 4-methyl-2-phenyl-2-pentenal a potential biomarker for the consumption of these foods. Based on a literature review very few articles have been published on 4-Methyl-2-phenyl-2-pentenal.
