Description1-Penten-3-one, also known as ethylvinylketone or pentenone, belongs to the class of organic compounds known as enones. Enones are compounds containing the enone functional group, with the structure RC(=O)CR'. Thus, 1-penten-3-one is considered to be an oxygenated hydrocarbon. 1-Penten-3-one is a fish, garlic, and mustard tasting compound. 1-Penten-3-one has been detected, but not quantified in, several different foods, such as malus (crab apple), pepper (c. baccatum), wasabis (Wasabia japonica), shiitakes (Lentinus edodes), and hard wheats (Triticum durum). This could make 1-penten-3-one a potential biomarker for the consumption of these foods. Based on a literature review very few articles have been published on 1-Penten-3-one.
