Description | 1,3-Dithiane, also known as dithiane-1,3 or m-dithiane, belongs to the class of organic compounds known as dithianes. Dithianes are compounds containing a dithiane moiety, which is composed of a cyclohexane core structure wherein two methylene units are replaced by sulfur centres. 1,3-Dithiane is an alliaceous and roasted tasting compound. 1,3-Dithiane is found, on average, in the highest concentration within soft-necked garlics (Allium sativum L. var. sativum). 1,3-Dithiane has also been detected, but not quantified in, several different foods, such as onion-family vegetables, welsh onions (Allium fistulosum), green onion, garden onion (var.), and garden onions (Allium cepa). This could make 1,3-dithiane a potential biomarker for the consumption of these foods. Based on a literature review a significant number of articles have been published on 1,3-Dithiane. |
