DescriptionIsoflavone, also known as 3-phenylchromone, belongs to the class of organic compounds known as isoflavones. These are polycyclic compounds containing a 2-isoflavene skeleton which bears a ketone group at the C4 carbon atom. Thus, isoflavone is considered to be a flavonoid lipid molecule. Isoflavone is a very hydrophobic molecule, practically insoluble (in water), and relatively neutral. Isoflavone is a bitter tasting compound. Isoflavone is found, on average, in the highest concentration within a few different foods, such as soy beans, natto, and other soy products and in a lower concentration in other bread products, biscuits, and pigeon pea. This could make isoflavone a potential biomarker for the consumption of these foods.
