DescriptionCarvone, also known as 2-methyl-5-(1-methylethenyl)-2-cyclohexen-1-one or 2-methyl-5-isopropenyl-2-cyclohexenone, is a member of the class of compounds known as menthane monoterpenoids. Menthane monoterpenoids are monoterpenoids with a structure based on the o-, m-, or p-menthane backbone. P-menthane consists of the cyclohexane ring with a methyl group and a (2-methyl)-propyl group at the 1 and 4 ring position, respectively. The o- and m- menthanes are much rarer, and presumably arise by alkyl migration of p-menthanes. Carvone is slightly soluble (in water) and an extremely weak basic (essentially neutral) compound (based on its pKa). Carvone can be found primarily in saliva and urine. Within the cell, carvone is primarily located in the membrane (predicted from logP). It can also be found in the extracellular space. Carvone is a member of a family of chemicals called terpenoids. Carvone is found naturally in many essential oils, but is most abundant in the oils from seeds of caraway (Carum carvi), spearmint (Mentha spicata), and dill .
