DescriptionCellulose belongs to the class of organic compounds known as o-glycosyl compounds. These are glycoside in which a sugar group is bonded through one carbon to another group via a O-glycosidic bond. Cellulose is an odorless tasting compound. Cellulose is found, on average, in the highest concentration within a few different foods, such as oats (Avena sativa), rice (Oryza sativa), and evening primroses (Oenothera biennis) and in a lower concentration in pineapples (Ananas comosus), carobs (Ceratonia siliqua), and barleys (Hordeum vulgare). Cellulose has also been detected, but not quantified in, several different foods, such as white mustards (Sinapis alba), french plantains (Musa X paradisiaca), common hazelnuts (Corylus avellana), sunflowers (Helianthus annuus), and arabica coffees (Coffea arabica). This could make cellulose a potential biomarker for the consumption of these foods. Based on a literature review a significant number of articles have been published on Cellulose.
