DescriptionThiamine, also known as aneurin or vitamin B1, belongs to the class of organic compounds known as thiamines. Thiamines are compounds containing a thiamine moiety, which is structurally characterized by a 3-[(4-Amino-2-methyl-pyrimidin-5-yl)methyl]-4-methyl-thiazol-5-yl backbone. Thiamine is a very strong basic compound (based on its pKa). Thiamine exists in all living species, ranging from bacteria to humans. Thiamine is a bitter tasting compound. Thiamine is found, on average, in the highest concentration within a few different foods, such as spread, leavening agents, and meat bouillons and in a lower concentration in black walnuts, kales, and catjang pea. Thiamine has also been detected, but not quantified in, several different foods, such as meatballs, chewing gums, sakes, cooking oils, and babassu palms. This could make thiamine a potential biomarker for the consumption of these foods. Thiamine is a potentially toxic compound.
